Whoever visits Kathrin Otte and Christoph Knäbel in Deidesheim meets a young team with a clear idea of how Pfalz Riesling should taste today. Since taking over the family estate in 2014, the two have followed their own line: more elegance, fewer muscles. More origin, less styling. Wines that convince through finesse — not volume.
Kathrin brings her oenology education and experience from several top estates, Christoph his passion for authentic, characterful wines. Together they have given the estate a clear profile: precise single-vineyard wines, organically farmed, with a signature you recognise.
Deidesheim — an Address with Ambition
Deidesheim is one of the most renowned wine villages in Germany. The vineyards of Weingut Mehling lie in sites that every Pfalz lover knows: Forster Ungeheuer, Deidesheimer Kieselberg, Königsbacher Ölberg, Deidesheimer Paradiesgarten, Forster Musenhang — all top vineyards with different soils and their own characters.
It's precisely this diversity that makes the Mehling selection so exciting. Each parcel brings its own expression, and Kathrin and Christoph work very deliberately to make these differences tangible in the glass.
Organic as Foundation — Patience as Signature
Weingut Mehling has been bio-certified since 2014. For Kathrin and Christoph this isn't a marketing decision but a fundamental principle: healthy soils, living vineyards, no synthetic pesticides. The harvest takes place in several passes, exclusively by hand.
In the cellar begins the part that makes Weingut Mehling particularly distinctive: patience. The single-vineyard wines ferment spontaneously and then age long on the lees — some for six to fifteen months, others up to 36 months. This is no coincidence but conviction: great wines need time to fully unfold. And they need a winemaker who has the courage to invest this time — even when faster solutions would be easier.
The result is wines that clearly show their origin — differentiated, individual, age-worthy. And that deliberately don't taste the same every year, because each vintage should be allowed to tell its own story.
