A puristic, powerful Pinot sparkling wine, characterized by cool elegance, fine reduction, and clear minerality. The cuvée of Pinot Noir, Pinot Blanc, and Pinot Gris combines aromatic precision with fine yeasty and stony spice. The nose reveals red apple peel, citrus, brioche, yeast pastries, and delicate nutty notes, underpinned by a fine, chalky-mineral line.
The aroma is cool and clear, with white blossoms, citrus notes, toasted almonds, and slightly smoky accents. The Pinot grape varieties bring both freshness and structure: Pinot Blanc for fine creaminess, Pinot Gris for mellowness, Pinot Noir for depth and tension.
On the palate, the sparkling wine shows the finest, persistently acting perlage, a taut acidity and a chalky-salty minerality. The 26-month bottle aging gives it brioche and yeast notes without diminishing its freshness.
The grapes come from two classic Deidesheim vineyards in the Mittelhaardt:
– Ruppertsberger Reiterpfad – known for warmth, structure, and fine spice,
– Mussbacher Eselshaut – stands for freshness, balanced acidity, and fine fruit.
The soils range from sandy loam to red sandstone weathering and calcareous inclusions, which gives the sparkling wine its mineral backbone and clarity.
The base wines were spontaneously fermented and aged for 12 months in barrels before traditional bottle fermentation took place.
The aging promotes depth and finesse, without sweetness or softness — an uncompromisingly dry, precise sparkling wine in the classic Méthode Traditionnelle style.
