A non-alcoholic, dry beverage made from early-harvest Riesling grapes, the modern, wine-like alternative for all those moments when you want the freshness and structure of a white wine but are consciously choosing not to drink alcohol.

On the nose, the verjus is fresh and precise, with green apple skin, lime, a hint of whitecurrant and delicate herbal notes. On the palate, it is lively, crisp and distinctly dry, with a clear, acidity-driven line and clean, precise fruitiness that never veers into sweetness. Noticeably more wine-like than any fruit juice, but without the alcohol.

Verjus is particularly convincing as the base for a non-alcoholic spritz: over ice with soda (f.ex. Sanbitter) or tonic, a slice of lemon or grapefruit and a sprig of rosemary or thyme, the first adult aperitif without alcohol is ready, one that actually tastes like an aperitif and not like a lemonade-like substitute. Also served neat in a wine glass, with food and for toasting, it works as a full-bodied wine substitute, especially with fish dishes, salads and light cuisine.

In modern bar culture, verjus is the fastest-growing base for creative mocktails. Its wine-like structure, fine acidity and mineral depth give the bartender exactly the backbone that classic juices lack, ideal in combination with fresh herbs, citrus peels, berries, ginger or a splash of elderflower syrup.

Furthermore, verjus is a delicately acidic seasoning in the kitchen: in vinaigrettes, marinades, light sauces and reductions, it replaces vinegar or lemon juice where these would be too dominant, and enhances the inherent flavor of the ingredients with an elegant, wine-like note.

The verjus is made from early-harvest Riesling grapes from Weingut Andres. The grapes are gently pressed, filtered and pasteurized; fermentation is deliberately avoided so that the must retains its clear, lively acidity and non-alcoholic character.

A modern organic verjus with character, an elegant wine alternative, spritz base and kitchen tool in one bottle.
