The PHYLLIT Pinot Noir from solveigs comes from the steep vineyards around Assmannshausen in the Rheingau, where red phyllite slate characterizes the soils. These lean, low-water soils force the vines to deep root growth and lead to low but extract-rich yields. The wine is predominantly vinified from younger vines and stylistically represents a more accessible, yet terroir-driven Pinot Noir.

On the nose, the Pinot Noir is elegant and finely nuanced, with aromas of red berries, cherry, and subtle herbal notes. The profile is complemented by a typical, slightly smoky slate spice, as well as earthy and spicy hints. On the palate, the wine appears light-footed and precise, with lively acidity, fine structure, and a subtle, Burgundian-like style. The combination of fruit, minerality, and cool elegance ensures a clear, invigorating length.

Vinification follows the principle of minimal intervention: spontaneous fermentation with natural yeasts, no fining agents or enzymes, unfiltered, and with only a small addition of sulfur. The wine is aged for around two years in barrels and then further aged in the bottle. This "controlled inaction" allows for natural development and gives the wine clarity, balance, and stability.
