solveigs' STEIL Pinot Noir originates from the steep vineyard sites around Assmannshausen in the Rheingau, where red phyllite slate and slopes with inclines of up to 70° characterize the conditions. These extreme steep slopes are among Germany's most classic Pinot Noir terroirs and produce wines strongly influenced by microclimate, soil, and exposure. For STEIL, specific individual plots are selected, ensuring that each bottling reflects the unique character of its site and particularly highlights the complexity of the Pinot Noir.
On the nose, the Pinot Noir reveals an exciting aroma of dark berries, cherry, and subtle herbs, accompanied by smoky-mineral notes of slate and a delicate earthy spice. On the palate, the wine is dry, powerful yet elegant, with a precise acid structure, cool minerality, and a clear, structured texture. The balance of fruit, spice, and mineral depth ensures length and expression on the finish.
Vinification follows the principle of minimal intervention: spontaneous fermentation with natural yeasts, no use of fining agents, enzymes, or added tartaric acid. The wine is bottled unfiltered and matures for at least two years in barrels and subsequently in the bottle. This "controlled inaction" allows for natural development and gives the Pinot Noir depth, stability, and high aging potential. The alcohol is derived exclusively from natural grape sugar.
