Württemberg — Diversity You Can Taste

Württemberg's richness lies in its soils. Muschelkalk, Gipskeuper, Schilfsandstein, variegated marl — four very different geologies, each producing its own wine characters. Christian Dautel farms parcels in some of the region's finest vineyards: SCHUPEN and STEINGRÜBEN in Bönnigheim, FORSTBERG in Oberstenfeld, MICHAELSBERG in Cleebronn, SONNENBERG and NIEDERNBERG in Besigheim. Every soil, every site, every grape variety finds its own voice.

Understanding Burgundy — Living Württemberg

Christian studied at Geisenheim and gathered experience afterwards at some of the world's finest estates — including Meursault, in the heart of Burgundy. That schooling shows particularly in his Chardonnays and Spätburgunders: long maturation in oak, restraint in intervention, and that unforced elegance that defines great Burgundies. But Dautel doesn't copy. He translates — into a Württemberg language with its own minerality, its own freshness, its own tension.

"Controlled Doing Nothing" in the Cellar

In the cellar Christian speaks of "kontrolliertes Nichtstun" — controlled doing nothing — and it describes his approach perfectly. Spontaneous fermentation for the Großen Gewächsen, long ageing in oak, no fining where unnecessary, very measured use of wood. Wood you never taste as "wood," but as structure. Behind it lies the trust that the decisive work has long since been done in the vineyard.

The result are wines that don't seek attention, but clarity. With the substance to allow ageing — and the patience that rewards the wait.
